In our farm we grow organically by about 5 hectares of olive trees for a total of 1,500 olive trees. The olives are harvested by hand and pressed the nearby mill system with a controlled temperature. The olives are taken to the mill at most three days after harvest to maintain quality supplements. The oil is bottled after a short settling in bottles of 250 ml, 500 ml and 750 ml. Filtrate can not be subject to a slight sediment on the bottom that does not compromise the quality of the product.
